What a Weekend!

After I posted my little #HoosierPoolKwood update, I thought I'd give another fun-filled little update about our Memorial Day weekend 'round these parts.  I have just a couple days of meetings this week then I am officially DONE with school for the summer and until August 1st. Woo-freaking-hoo!  I cannot wait.



Patrick is really becoming a whiz on his stride bike -- and we've taken a few walks to the playground recently and he's cruised right along on it like a pro!  I also love how stylin' he looks with his dino helmet and Babiators.






All of the kids, Scoots included, had a blast at the park yesterday morning. The weather has been gorgeous lately, and we're trying to take advantage of our outdoors time not in the pool as much as we can until it gets stupid hot and muggy and awful out.


Scooter got invited once again (third year in a row!) to Pooches in the Ballpark and our tickets came this week and I just love getting mail addressed to my dog.  Braxton and Lauren are going with us this year (Mike's gotta work.  Boo hiss.) so it's gonna be so much fun having them there with us!!


Rosie has developed an addiction to milk shakes (cannot blame her) and whenever I get one she demands it and sucks that sucker dry and I am without my shake.  So I need to get better about concealing it from both her and Patrick now if I want my frosty beverage all to myself.


Patrick is basically a child prodigy and figured out the childproof door looks on the knobs so he can waltz out of his room whenever he feels like it.  This.sucks.  So!  I ordered a tall door lock for his room so he can't let himself out early in the morn to come hang in bed with us.  Mama don't play that game.


I mean, could they be any cuter?!! #Nope


My mom found my birth announcement from almost 31 years ago when I was born and I felt like it was a blog-worthy inclusion so here ya go.  Wasn't I cute?!  And what the heck was I covered with?!  A tarp?!!  Geez.



Yesterday marked 25 years since my grandma (my mom's dad) died...so my mom and a few of her siblings had a big BBQ with his favorite food and went to the graveyard to say hello.  Patrick really enjoyed it because he now tells me, "I see dead people at cemetery."  So that's fun.  Haha!


Mike and I didn't go to the BBQ because we had a wedding to shoot!  Yes!  We have FOUR weddings booked for 2016 so the first one up with on Memorial Day weekend for Bill and Colleen.  All week rain and storms were predicted and then BOOM.  Nothing: bright sunny skies and the most perfect weather imaginable, which was perfect since it was an outdoor wedding.











I picked a few of my favorite snaps from their day and edited them and posted some quick teasers late last night for them to see...and now, since it's naptime, I'm diving into the 3100+ other pics we took last night!  Yeah, it's gonna take me a while to get through these!  But that's okay, I enjoy doing it a lot!

So, that's about all I've got for this quick little weekend recap!  We're having a BBQ dinner over here at our place tonight with Mike's family, so that'll be fun.  Patrick is excited to go swimming with uncle Brian.

Big news 'round these parts...and if you follow me on Instagram I apologize for the repetitiveness, but: WE GOT A POOL!  And you can follow along with our fun on Instagram with the #HoosierPoolKwood hashtag.


I'm so excited.  we had this exact same model/size pool at our city house and we loved it so--and this was prekids.  When I came across it last year at Big Lots on 50% clearance for $59, I couldn't pass it up!  We knew we didn't have the room for it because of 1. too much shade 2. uneven ground 3. giant trees in the way, but we figured we'd find a spot for it eventually.  Well, fast forwarded to us having those 5 giant trees taken out, Mike doing some ground leveling, and BAM!  We had room for our pool!

It took Mike and I maybe an hour to set up and then several hours to fill up and we were good to go.  To say Patrick was excited was an understatement: he literally could.not.wait. to get in!


Of course it poured down rain the day we got it setup, but fortunately someone was pretty understanding and we were able to hold him off until the afternoon to test out the waters.  Literally.  They were FREEZING.




That didn't stop him--he loved it, teeth chattering and all!  He has asked to "go to Bear Park Pool" literally every waking second, and I'm sure it won't stop all summer long.

We love going to Kirkwood pool, but sometimes we don't have a TON of time to go, and it's challenging enough taking these two anywhere, let alone a pool.  But having one in our backyard to come and go in at our leisure is amazing and will be our go-to all summer long!









Ro finally got brave and ventured in earlier today -- and it was still kinda chilly and took her a bit to warm up (literally!) to it but once she did she had a blast.  I can't wait till it gets even warmer and she starts to really swim and float on her own (thank you Puddle Jumpers) and have a blast in the water with her brother!

Cheesy Potatoes


Okay, this is my go-to side dish for 99% of our dinners when we have people over OR if I need to bring a side to a family party.  It's Alex-approved and so ridiculously easy.  A lot of times I prep it the night before so all I need to do it pop it in the oven and enjoy.  Easy peasy!  I should point out for the people that like onions, you can add them to this dish...but, you know my feelings on onions and I loathe them so I'm making this comment up top here so as not to confuse anyone with my pristine recipe below that DOES NOT include onions because they are the devil.

What you'll need:
  • Baking container (I use a 9x13 Pyrex glass one)
  • Cooking spray
  • 1 bag of shredded hash browns, thawed (note: you can use frozen hash browns BUT add another 15-20 minutes onto your cooking time)
  • 5 cups of shredded cheddar cheese
  • 1 container (16 oz) sour cream
  • 1 can cream of chicken soup
  • salt and pepper
  • OPTIONAL: corn flakes and 2 tbsp. butter melted
How to cook this delicious dish:
  1. Preheat your oven to 400F.
  2. Spray your baking container generously with cooking spray.
  3. In a large bowl, combine the sour cream, cream of chicken soup, and salt and pepper (no clue on the amount, but a good amount of each to make sure you have good flavoring)
  4. Once combined, stir in the 5 cups of shredded cheese.
  5. Add the shredded hash browns to your mixture and stir until fully combined
  6. Spread the mixture into your baking container, layering and smoothing the top
  7. OPTIONAL: add corn flakes to the top, covering the mixture, sprinkle melted butter over the top
  8. Place in oven, bake at 400F for 45-60 minutes
  9. When sides are bubbling and top is golden brown, it's done!
  10. SERVE and enjoy!

Yup, that's it--easy peasy and SO GOOD!  Again, my go-to side dish for anything, and it really pairs well with most BBQ and any meat that you serve!  If you make this and love it, let me know!  I'd love to hear about it!


Crockpot Ribs


Mike has concocted the most delicious ribs recipe EVER -- and it's using the crockpot!  Genius, right?!!  I mean, the guy makes some mean ribs on the grill, but these ones in the crockpot mighttttt be my new most favorite...and, they're Alex-approved because they are stupid easy to make.

What you'll need:
  • Crockpot
  • Slab of ribs (or two!)
  • 1 can of Pepsi or Coke
  • Cavender's seasoning
  • 1 cup brown sugar
  • OPTIONAL: garlic cloves
How to make this tastiness: 
  1. Cut the ribs (they actually cut easier if they're almost frozen!) and season them generously with the Cavender's.
  2. Place them in the crockpot, and sprinkle the brown sugar over them.
  3. Dump the entire can of soda in the crockpot; try and do this so the seasoning stays on the ribs and doesn't get taken off by the soda pouring in (aka try and pour the soda NOT on the ribs but just against the crockpot walls)
  4. Cover with the lid, turn crockpot on low for 5-6 hours.
  5. Ribs are cooked (literally delicious-falling-off-the-bone) after about 5.5-6 hours.
  6. Serve!  We serve them straight out of the crockpot and/or coat them with our favorite Blue's Hog BBQ sauce.

Seriously, SO EASY, amiright?!  And soooo tasty.  Please let me know how much you enjoy this recipe if you make it...I promise you will!!  Serve them with these cheesy potatoes and your tastebuds will thank you.  And, side note, the Cavender's seasoning is the best seasoning EVER and we love just coating chicken drummies with it, tossing them on the grill, and enjoying.

Patrick Tales | 06

Ahhhh, aren't you in for a treat today?!!  Another exciting installment of Patrick Tales!  I swear this kid gets funnier and funnier each and every day.  He hears and understands EVERYTHING, and lately, likes to repeat it as well (as my aunt Kate calls him, a little parrot).  But!  The stuff that he is saying and repeating is freaking hysterical and leaves us in stitches almost all the time.  For example, the very first Tale below: Mike and I were crying laughing laying in bed last night over Patrick saying that, and again this morning when we chatted on the phone JUST to start giggling over it again.

Anyways, without further adieu, another riveting installment of Patrick Tales.


Currently Matt & Katie are storing some of their furniture in our basement until they move into their new house...Mike and Patrick walk down the steps to the basement...
Patrick: {pointing} Look at this junk!
Mike: Is that what mommy calls it?
Patrick: Uh-huh.


After our walk, I ran inside to put Scooter away and grab my camera for some backyard pics...I come back outside to this ^^^
Me: WHAT ARE YOU DOING?!!!
Patrick: I peeing. KiKi said to find a bush if I got to pee.


Me: Patrick, do you want another brother or sister someday?
Patrick: I want a dog.
Me: We already have a dog!

Patrick: I want another one.

{Scooter sneezes}
Patrick: Bless you Scooter!


In the mornings my new 'do is CRAZY and it needs a'many brushings and spray detanglers to tame it.
Me: Patrick, come look at mommy's crazy hair!
Patrick: Ohhhhhhhhhh, it look beautiful mommy.

Out to dinner at our favorite Chinese restaurant...
Patrick: I want that! {pointing to a crab rangoon}
Mike: It’s too hot buddy.
Patrick: I want it!
Mike: Well then what do you say?
Patrick: Cut it with a knife to cool it!


Patrick: {calling out from the bathroom} Daddy, whatcha doing?
Mike: I’m picking up your disaster you made all morning in the family room.
Patrick: I pooped on the floor.
Mike: WHAT?! How did that happen?!
Patrick: It fell out my butt.


While on one of his many vacations at KiKi's Lake...
Patrick: {in bathtub} Skye's all clean!
KiKi: I love Skye.
Patrick: I love Rocky!
This goes on for a while...KiKi is playing on her phone while Patrick continues to play in the tub, then sees that the entire half galon container of soap is gone because Patrick used it to clean Skye 57 million times.

While at Goose's nursing home, Patrick has a conversation with Greenlee, one of the nurses.
Greenlee: Do you have a girlfriend?
Patrick: Yes.
Greenlee: What's her name?
Patrick: RoRo


Patrick woke up early one morning and I wanted to get some stuff done before he was UP for good...so I gave him is iPad and told him to watch it in his room until his green light (nightlight stoplight that tells him when it's okay to get out of bed) comes on.
Patrick: {singing} tinkle tinkle wittle star how I wonder what you are...
Me: {goes into his room} Buddy, no talking until the green light comes on!
Patrick: I not talking I SINGING!!!!


I pick up a piece of lettuce off the ground Ro dropped and Scoots didn't eat, and I say to myself
Me: No wonder he didn't eat it. It's a leaf. 
Patrick: it's not a leaf mom it's salad!

Ahhhh, isn't he a little ham?!  I'm sure I'm probably the only one laughing at these, but whatevs.  What a great little memory for him to look back on in 15 years when he's graduating from high school!  Digital baby book right here folks.
